I always double it. No matter what. I never really measure the bread
crumbs I just use what I have saved up and go from there. Now hers
is really good but as most cooks do I have to add my little twist to
things.
I added a can of crushed pineapple with the juice.
1 cup of softened raisins
I used 1 cup of coconut milk and 1 cup of orange juice.
I doubled the topping because it just didn't look like enough.
It's in the oven and I can't wait for it to come out! It smells just soooo tasty....
Hubby likes me to make a tequila lime sauce to put over it all so I guess I will do that also. Not sure it needs it with the pecan "sauce " on top but just in case a little sugar, butter, lime and tequila never hurt nothing. LOL
