PB & Jelly Poke Cake




              
         
How do you like my recipe hook ? Pretty nice really.
I am still on the hunt for some good basic cake recipes.
I saw this PB & Jelly Poke Cake and thought I would give it a try with the basic plain cake. I left one corner of the cake naked so I could just sample the cake only without all the peanut butter and jelly influencing it.
    I think I may have made one poke cake in my life so I did learn I need to make a lot more holes in the cake and probably bigger than these. This cake wanted me to poke holes in it then every other hole put softened peanut butter and then the jelly in the other holes. I chose raspberry jelly. It called for a peanut butter frosting using cream cheese which I am sure would have been delicious but since I can't do milk products I just used margarine. The cake looked really ugly with just peanut butter frosting so I dipped an swirled the raspberry jelly into the top of the cake. It looks much better in person than in the picture.
     It tasted pretty good. Sure was sweet though. Might have to figure out something more tame on that part. Depends on what folks report back to me on their taste buds.
     At least I found a good basic cake though. I need to multiply it into at least 3 layers this recipe was for only a 1" high  9" layer. I would like it to be taller so a smaller pan may work just as well.

Ok so that was this weekends experiment. I have another type of vanilla cake recipe to try and see how that one performs. Husbands can be so funny sometimes, a little irritating also. He just got all perturbed because he just doesn't understand why I am making so many different cakes. According to him nobody eats those kind anyway. I am just wasting my time. I just need to stick to plain ol vanilla and maybe a chocolate cake. I told him next time your at the local grocery store you stop by their ready made cakes in the refrigerated area and look at all the different kinds of cakes they have. They wouldn't have so many different varieties to sell if people didn't like something besides vanilla or chocolate! Then I went on you tube and showed him all the many different kinds of poke cake to watch being made. 
MEN!!!!! Some just ain't got no clue! LOL
