My garage has to be at a cooler temp for the freeze drier to work. Summer temperatures just messes it all up.
Now the holidays are over and I have a break I can get a few things done.
Hubby doesn't always agree with me on my stocking up on things. I do it anyway. LOL
For some reason he watched a video somewhere on someone drying eggs and
decided that was a great idea! I was at Sams the other day and picked up
2 packages of 24 organic eggs for $8.38 each limit 2.
I only put 24 eggs all beat up with the mixer into 3 trays. I didn't want to do them all just in case I messed up.
They came out great! The hardest part was finding jars to put them in.
If I have quart canning jars I have no clue where they are. I do like to
save the spaghetti jars to use for such things. They didn't smell like
spaghetti sauce so were safe to use. I think each jar holds about 2 1/4
cups so 24 eggs made 4.5 cups total.
Now if I can learn how to use them in baking that would be nice. This is what I found.
How To Use Freeze Dried Eggs: One egg equals 2 tablespoons of
freeze dry mixed with 2 tablespoons of water. These can be used in any
baking recipe, or rehydrated and used to make scrambled eggs.
How do you use freeze-dried eggs?
To use freeze dried powered eggs in baking, combine 2 tablespoons of egg
powder and 2 tablespoons water in a bowl. Stir and let sit for two
minutes to allow the water to get absorbed into the egg powder. You can
then cook the egg like scrambled eggs or use in baking.
Hummm. didn't think to weigh all of them before putting in jars.

How long is the shelf life of dehydrated eggs?
Powdered eggs have a storage life of 5–10 years depending on the
environment. The shelf life can further be extended by placing eggs
powdered in air tight containers under anaerobic conditions or placed in
a cool storage place. There is no need for any refrigeration or cold as
in case of liquid eggs.
Can you vacuum seal dehydrated eggs?
When it comes to storing home dehydrated eggs, I recommend vacuum
sealing the eggs. You can put the eggs in a mason jar and use a vacuum
sealer, such as a Foodsaver. You can also put the eggs into a mylar bag
or a mason jar and use oxygen absorbers.
Ooops! Too late! I took a tiny nibble. They tasted very eggy like egg yolk. They also stuck to my teeth something fierce. LOL
Can you get salmonella from dehydrated eggs?
Eggs dehydrate easily, and most online sources suggest keeping the eggs
at 135° F to 145° F for about 10 hours. However this temperature is not
sufficient to keep salmonella from forming during the dehydration
process, because this leaves eggs in the food safety danger zone for too
long.
Do dehydrated eggs lose nutrients?
There is no loss when used because the dried egg is usually added
directly to the batch. No special transfer or storage equipment is
needed. Because the moisture content is reduced from around 74% to 2–4%
by weight, there is a reduction in weight and volume and a concentration
of food value.
