Forget writing books just make good desserts! LOL
Oh My Goodness! I am in recovery mode! I guess
most everyone else is also. LOL I hope everyone had a nice /
blessed Thanksgiving this year. It has been a crazy stupid year in
so many ways for our country but we can at least make things as
good as we can for our immediate families and friends.
It was a real challenge for me this year. I had a function of
some kind every 2 days to bring desserts to! Wow! I have people
tell me all the time I need to open or sell my baked goods but
they haven't a clue what that involves. I thought I was doing good
and getting ahead by making enough of some things I could take to
each place. There is barely enough room with my counter space to
get one thing done much less all I had to do this holiday. Then
when I made things ahead and had all the "extra" stuff I had to
find containers and counter space to store the goodies until it
was time to take things. I have my own mini fridge now that was a
absolute life saver! Made things so much easier but still it was
all a organized puzzle to do. I was in panic mode after doing
cookies I found only about 4 pounds of powdered sugar left for all
the frostings I needed! Which reminds me I need to get at least
25#'s to have around here for the next round of treats.
I made turkey cut out cookies 40+
Chocolate covered mint oreos ( a huge hit! )
miniature chocolate cupcakes with vanilla and chocolate swirled
frosting
Then separately made a 10" sour cream chocolate cheesecake (New
York) with oreo crust, maraschino cherries on top with drizzled
chocolate on top of that. I had so much filling I also made a
smaller 8" cheesecake.
Another thing was a Red velvet cake with thick cream cheese
filling frosted with toasted coconut on the side and red velvet
cake crumbs on the top.
The last 2 were really pretty. They tasted pretty good to. I am
not a fan of the sour cream flavor in the cheese cake but everyone
else loved it.
I know I must be doing something right when at church I had
several people come up and have special orders they had to fill.
One had a boyfriend that said if Bonnie's coming BE SURE to bring
something good home. Another lady said her husband and son told
her to bring some goodies home also. Then one of the family
functions I had a good laugh. A wife came up and said if Bonnie's
(desserts) not coming he wasn't going! One of the little kids
wanted to know if the Sweets Lady was coming. LOL
Nikki's mom had to cancel their turkey dinner because her and
her husband both had covid. I told Nikki if she still wanted to do
one I have a 24# Smoked ham I would donate and bring desserts. She
said sure and so we had both sets of her husbands parents, me and
my hubby and then her family of 4. She called and warned that her
son had the sniffles and congestion if we wanted to avoid getting
sick. I told her kids always have sniffles and yuck going on we
would take the chance. One thing is for sure even though I went by
what the internet said on how to warm a sliced smoked turkey it
still came out dry with 4 cups of water and tightly sealed with
foil. Meat is for sure not my forte LOL She had a nice cinnamony
pumpkin pie and I had the cookies, chocolate covered oreos and
mini cupcakes. We all had a good time visiting.
I am making a huge pot of pinto beans and going to put a bunch
of ham in it because hubby likes lots of meat when you have beans
on the plate. I am going to be making a load and a half of
cornbread muffins to go with it. I asked Nikki if they wanted some
but I think she had leftovers like everyone else and said no
thanks. If I get really energetic I might package some up for the
church group of just a few ladies to share with them. I don't know
lets see how much this makes up I know at least a gallon of soaked
beans so far. I did have enough to share with 5 church members after all and when hubby was tired of them put a bunch in the freezer!
