Zucchini Day !

         It's about that time of year now isn't it? Zucchini running out our ears! Son in law picked some for me and dropped it off. I finally got around to getting the whiz bang out and shredding today.
         I know people do all kinds of things with this veggie..... So far I am only into the zucchini bread. I might try some cookies or brownies. I did try some zucchini fritters but I couldn't get them crisp enough. Those were not real great.

So ok... look at this set up below.
How many quarts of 2 cups of zucchini do you think I will get?
I have 25 freezer bags.

Turns out I got 17 quart bags and 8 left over 

with 2 cups of zucchini in each of them.
Each bag makes 2 large loaves of zucchini bread.
That's 34 loaves of zucchini bread of all the different flavors in the world!
I have a wonderful recipe for chocolate zucchini bread I swear tastes like fudge.
Think I am going to find time to make some. 

I have a niece I can practice shipping stuff to.
