Last week was busy for me. I had 2 folks I got to make
birthday cakes for. Hectic but fun.
One was for Nikki’s grandfather. This is the man that wasn’t feeling well for a little while because of heart issues. He lost a lot of weight so every now and then I take something over to fatten him up!
I asked what his favorite pie or cake was. He said coconut cream pie and banana nut cake. I said I had never made a banana nut cake from scratch so if he doesn’t mind I’ll practice on him. I was so tickled with the recipe! It’s hard for me to find a really good recipe I like. I tell you after filling the pans I licked the beater and that mixing bowl so clean I didn’t have much cleaning by the time it made it to the sink!
I made some nice cream cheese frosting for the middle. The outside frosting was a combination of real bananas, half butter, half cream cheese using a banana extract for extra boost in flavor. It took at least 3 lbs of powdered sugar to get it all mixed up right.
On the very top in the middle had chunky pecans.
Now here’s the good part. I delivered the cake singing Happy Birthday on the way into the house. Set everything up with the birthday in the bag stuff and the butter pecan ice cream I picked up on the way over.
We couldn’t get the match to work so his wife lit it old style using a napkin. I was ready to put it out if it got away from us. Her husband was the smart one and after she lit the cake he said " Couldn't you have lit the match on the stove instead of the napkin?" Well Duh! We didn't think of the obvious. This was much more fun any way! LOL
Since we have this crazy COVID thing going on we can’t just blow candles out so we had to figure something else out using a paper plate!
I sang Happy 80th Birthday To him. The problem is.... are you ready?.... he was actually 85!!
I had mixed up his birthday with his wife’s age! I felt bad for messing up but then laughed so hard.
Now who doesn’t want to be 5 years younger on their birthday?! What a birthday present!
We all had a piece of cake with their little Shizzioo ( I can’t spell it without a wordy dird) jumping up in his wife’s lap and eating almost as much as she did. She couldn’t get over it. She said he never does that! ( see I told you it was good cake lol) she decided she needed another piece and before she could sit back down the dog beat her to the chair and she had to move him to sit down and yes he wanted more.
We had a nice visit. He was 5 years younger that day and I found another good recipe!
