White Irish Soda Bread, sliced, ready for serving.

These recipes are from Gemma Stafford, a professionally-trained chef & baker originally from Ireland.

Given the crazy times we are having in this world with rising food prices and sometimes getting ingredients.... these recipes are good to try out and put in our recipe stash. The Irish depended on simple inexpensive recipes to make it through tough times. I bet these would work in our current daily crazy world.
This one everyone has the ingredients in the cupboard. If you go down the page a little bit you can hear her speak the Irish language in the video showing you how to make this bread.

Now this recipe is what she grew up on in Ireland that her mother made every day. I would make it but I don't usually have whole wheat flour around to use. Read the story through there for added character to the recipe.  She also tells you about why they put the cross in the bread. Think I will do that also. I think it is cool to be able to use the recipes that are truly original and coming from the real deal people.
